Elaboration
Hand harvested in small 15kg cases; destalking followed by 7 – 9 days skin contact in stainless steel vats without sulphur and with natural carbon dioxide; it is then pressed, clarified and fermented at 13°C with wild yeast. It is aged on its lees for 20 months (70% in tank and the rest in barrel – 16 months – blending everything for the last 4 months). Lightly clarified with bentonite.

13.5° Vol – 3.2 pH – 6.2 TA – 35mg SO2 .
Tastng notes
A steely yellow hue and a greenish rim. On the nose it is reminiscent of white and yellow flowers (petunia, orange-blossom, wallflower, jasmin…) and ripe white fruit (peach, apricot, melon…), hints of citrus (lime peel), faintly balsamic (mint) and touches of white chocolate. With oxygenation comes a faint touch of oak. In the mouth it is clean, fresh and citrusy with lots of white fruit. It is intense, has good acidity and is very persistent and complex, thanks to its extended ageing.
